Chicken Skewers with Peaches and Red Peppers

Montana peaches are coming soon – we are about to enter the best few weeks of the year to enjoy the local bounty. To take advantage of our abundance of peaches, I simplified a recipe from License to Grill, and put peaches on skewers with chicken and red peppers. The result: a simple summer meal perfect with a green salad. You can easily substitute fish for chicken, or substitute whatever veggies you like.

Sweet Potato Protein Pancakes

Who doesn't love pancakes for breakfast? Yum! But traditional American pancakes are laden with sugar and gluten - just what we don't need for breakfast. Since we all need protein to balance our blood sugar throughout the day, I decided to give myself a quick deadline. "Who wants pancakes?" I called, and quickly heard "I do, mom! Yay, pancakes!" Wanting to fill up our bellies with protein and smart carbs, I took out the almond flour and eggs, also some leftover sweet potatoes, cinnamon, vanilla and baking powder.
