I am always searching for a way to include more gelatin, a type of protein that is derived from collagen, in my diet. These delicious strawberry snacks make eating gelatin fun, they’re quick and easy to make, and chock full of health-enhancing nutrients.

gummies1Gelatin contains glycine and proline, two key amino acids that are severely lacking in our SAD (Standard American Diet). These amino acids are extremely beneficial in building and repairing tissue. Gelatin has been shown to significantly improve skin health, reduce wrinkles and restore elasticity. (Ladies, you’ll love it!) Gelatin also helps prevent arthritis, boost the immune system, boost the metabolism, balance hormones, reduce the appearance of cellulite, and strengthen bones. Appealing, right?

My very favorite health benefit of gelatin is its incredible gut healing properties. Like Hippocrates said, all disease begins in the gut. And as I’ve discussed (in a previous article), when it comes to being healthy, the gut should be our number one focus. Soothing and repairing damaged gut tissue improves digestion and our ability to absorb nutrients, which has the potential to transform our health

Instructions
  1. Mash strawberries in a large bowl.
  2. Combine all ingredients (except gelatin) in a large saucepan. Let mixture heat for 2-3 minutes or until it is very warm, but do not let it boil. Pour mixture into blender. Add gelatin.
  3. Blend mixture for 30 seconds, then pour into a 9x13 glass baking dish or special mold. Refrigerate for 2-3 hours.
  4. Remove from refrigerator when solid. Cut into bite-size cubes. Enjoy!
