Peppermint reminds me of the holidays. The taste. The smell.  Peppermint patties have been a long time favorite of mine. Since giving up sugar, I’ve been determined to make a healthier, sugar free version. I’m thrilled with the finished product. Much better than a York!

Conventional peppermint patties contain corn syrup, sugar and artificial flavors. I’ve replaced these ingredients with nutrient dense ingredients like coconut and coconut oil (some of the healthiest foods on the planet), which add to health, rather than take it away. Coconut oil contains medium chain triglycerides, the most usable form of fat. Fat is an essential part of a healthy diet. Peppermint also has a long list of health boosting properties. Peppermint is a powerful digestive aid and can ease stomach pain. Peppermint also helps eliminate food cravings, headaches, and one of my favorite benefits of peppermint, if inhaled, can immediately unclog sinus congestion. Ahhhh!

It doesn’t get much better than these creamy chocolate covered melt-in-your-mouth mints. They’re totally guilt free and will leave you feeling satisfied, refreshed, and coming back for just “one more”.

Patties
  1. Put shredded coconut in high speed blender ( I use a NutriBullet). Blend for 2-3 minutes or until smooth paste forms.
  2. Combine coconut, coconut oil, honey, vanilla, peppermint and salt in a large mixing bowl. Whip together with high speed mixer or Kitchen-Aid until smooth. (Watch for chunks of coconut oil.)
  3. Line baking sheet with parchment paper. Use tablespoon to scoop batter onto parchment paper.
  4. Wet finger with water and shape into small, round patties.
  5. Freeze until solid (1-2 hours).
Chocolate glaze
  1. Melt coconut oil in a small saucepan. Remove from heat.
  2. Add cacao powder, honey, vanilla and salt to saucepan. Stir until smooth.
  3. Add water to adjust thickness. Start with 1/2 Tbsp of water, stir and adjust according.
Dipping the patties
  1. Remove frozen patties from freezer. Use large spoon to dip patties into chocolate glaze. Do not let patties sit in chocolate glaze for too long or they will melt. Place chocolate covered patties on parchment paper. Freeze for 30 minutes and enjoy! (Store in refrigerator.)
