Lemon Poppy-Seed (Chia Seed) Protein Pancakes

  1. Wash one organic lemon. Zest entire lemon with a fine grater. Add juice and zest of lemon into high-speed blender.
  2. Add all ingredients into blender. Blend until smooth.
  3. Turn heat to medium/low. Grease pan with generous amount of coconut oil (1Tbsp). Wait until skillet is warm to pour pancake batter. This will keep them from sticking.
  4. Cook until pancakes begin to bubble, then flip.
  5. Serve warm with a scoop of So Delicious, dairy free yogurt and a handful of fresh, organic berries. Enjoy.
