Have you ever wondered why salads taste so much better when eating out? Hint: it’s the dressing! It’s all about the dressing. But many dressings are full of high fructose corn syrup, loads of sugar, and inflammatory oils. This is not what I want to be pouring over my greens! After all, shouldn’t your salad dressing be as healthy as your salad? Because that’s my goal, I created my own honey mustard vinaigrette. I use it on everything – as a dressing for a big green salad, as a sauce to drizzle over grilled vegetables, fish or meat. It’s also great as a dip for raw veggies.

This healthy honey mustard vinaigrette has tons of flavor, is quick and easy to make, and most likely you have all the ingredients in your pantry.  Many different types of oils work as a base for home made dressings, but avocado oil is king when it comes to healthy fats. Avocado oil is extremely anti-inflammatory.  In fact it works so well to squelch inflammation that doctors (or MDs) in other countries are prescribing it to their arthritic patients to help treat pain and inflammation. Avocado oil is also loaded with mono unsaturated fatty acids ( MUFA’s), which have been shown to lower cholesterol (LDL), balance hormones, and prevent cancer.

If you like garlic (or love it like I do), add another clove. Garlic is loaded with antioxidants and has potent medicinal properties. Garlic is known for its abilities to lower blood pressure, kill bad bacteria and help cure the common cold. It also lowers the risk of heart attack,  helps prevent Alzheimer’s disease, and cancer. Yes please!

Instructions
  1. Add oil and garlic to blender (I use a Vitamix). Blend for 15-20 seconds.
  2. Add Dijon mustard, honey, vinegar, salt and pepper. Blend for 15-20 seconds. Enjoy!
